I’m always looking for quick, easy, healthy and delicious meal options and I generally find that Amy’s products are a little to high in starch for my preference but I recently discovered her brown rice and vegetable bowl and I must say I was impressed. Its made with all organic ingredients and is a great source of vegetables, whole grains and fiber (5 grams). I wish it had a little more protein but overall I recommend it. For those of you who are interested, here are the “stats” 1 bowl = 260 calories, 9 grams of fat (low in saturated – its made from healthy fats), 36 grams carbs (part vegetable carbs, part brown rice), and 9 grams protein (tofu). If you track exchanges it would be 1 1/2 starch 1 vegetable 1 protein and 1 fat. Pretty balanced. And easy!
